On the Greek island of Hydra, a monastery hovers high above the port town. The heat adds miles to the ascent but there is shade from the olive and pine trees strewn about. At the top, the heavy whitewashed fortifications host a guestroom with water and mastiha candies. All around the Aegean gleams sapphire as the toll of the bells tumbles into the sea.
